Apple Wheat Muffins & a Giveaway



Happy {early} Thanksgiving! Because my posts have been very few and far between, I wanted to make sure I posted a recipe before Thanksgiving.   I didn’t have time to bake you a traditional apple pie, but I did whip up a batch of one of my favorite apple muffins.  You can easily include these in your Thanksgiving festivities, as either a side or a dessert, or even better as a breakfast/brunch item. 

These muffins are made with chunks of fresh apples.  I like to use Napa or Gala apples because they’re not too sweet.  However, feel free to use anything you have on hand.  The apples become soft and almost create this gooey texture that actually resembles an apple pie.  The cinnamon definitely helps with brining home that apple pie flavor as well.

*Now that baby Ezekiel is almost 7 weeks old {I know! Time seriously does fly}, I’m finally starting to settle into cooking and baking regularly again.  I’m not in the kitchen quite as much as I was before – I mean I did bake something pretty much every day – but I’m trying to whip something sweet up once a week.  Sooo I should be posting more frequently!  Thanks for being so patient with me.  Being a mom is not easy, but man is it worth it!

Apple Wheat Muffins

Makes: About 20 Muffins

2 cups Whole Wheat Flour
1 cup All Purpose Flour
1 teaspoon Baking Soda
½ teaspoon Salt
1 ½  teaspoons Cinnamon
1 ½ cups Sugar
½ cup Olive Oil
3 Eggs
2 Cups Apples (About 3 Medium), Chopped

Preheat the oven to 350 degrees F.  Line 1-2 muffin pans with baking liners.  Set aside until needed.

In a medium bowl, whisk together the flours, baking soda, salt, and cinnamon.  Set aside.

In a large bowl, stir together the sugar, oil and eggs, and whisk to combine.  Slowly incorporate the flour and mix until just incorporated.  Fold in the apples.

Using an ice cream scoop, divide the batter among the prepared baking liners.  Bake the muffins until they turn a light golden brown and a toothpick inserted into the center of a few muffins come out clean.

Allow the muffins to cool slightly, or completely depending on your preference, and then serve.

These last up to 5 days in a sealed container.

  21. Oh yum!! I can think of so many delicious things I could make with these two products especially the sprinkle topping. It would be great for cinnamon rolls or cinnamon muffins! Cinnamon roll cupcakes sound like something that needs to happen!!
