Easy Sun Dried Tomato Gnocci: Guest Post by Julie of Table for Two

We've made it to Florida!  After a couple long days, we're finally in our temporary home starting to settle in.  For the next month, we will be doing all things baseball related.  Steve will be at the Baseball field all day, everyday.  This means I spend my days baking and cooking half of the day and then watching Baseball games the other half.  And you know what, this is just the beginning!  This is just Spring Training in Florida, then the real Season starts in April.  It's a crazy life of packing and moving, packing and moving, packing and moving.  But it's our life now and we wouldn't have it any other way!

Because we are just starting to settle in, I have another wonderful Guest Post for you!  Today I have Julie from Table for Two.  I really got to know Julie last year through Twitter.  And I have to tell you, I am so incredibly happy I met her!  She has such an amazing personality - always happy, always kind, always making me smile.  I finally get to meet her in person this month at the Food Blog Forum in Orlando.  I can't wait!  Enjoy this gorgeous {and easy!} Sun Dried Tomato Gnocci.



Hi everyone! I'm Julie! I blog over at Table for Two where I share and inspire through my kitchen creations! Krissy asked me to guest post for her today. We all know she's super busy moving her life from the West coast over to the East coast (yeah, represent!) so I was thrilled when she asked me to guest post! I love Krissy! She is such a sweetheart and I cannot wait to see her at Food Blog Forum in Orlando in just 3 weeks. We are going to have so much fun, I just know it!

Anyway, so speaking of a busy & hectic life, have you ever had one of those evenings where you just didn't have the motivation to get up off the couch and cook? Or, if you had a rough day at work and you just are at wits end with what to make for dinner when you get home? Well, I have the dish for you. It's 3 simple ingredients and takes literally 10 minutes to make.



I know what you're thinking. 3 ingredients? 10 minutes? Probably bland. False. Far from it. The flavor comes from the sundried tomato pesto, Parmesan cheese (and lots of it!) and the starch of the gnocchi! If you've never made your own sundried tomato pesto before -- you must try it! But, if you don't have any on hand, you can pick up a jarred one from the store. Also, while you're at the store, grab some pre-made gnocchi. I don't have a potato ricer at home so I had to buy pre-made ones, but it saved me so much time! You only have to cook them for 2 minutes!

Okay, so here is what you'll need for a serving of 3-4:

2 tbsp. sundried tomato pesto
1 package of pre-made gnocchi pasta
1/2 cup freshly grated Parmesan cheese, more for topping.
Salt and pepper to taste

Instructions:
1. Bring a pot of water to boil.

2. While the water is coming to a boil, in a large skillet on medium heat, put 2 tbsp. of the pesto in the skillet and press the pesto against the skillet to release the flavors and oils.

3. Once your water has boiled, add some salt and throw in the gnocchi. Follow instructions on the packaging, mine said 2 minutes.

4. Ladle 2 ladle spoonfuls of starchy gnocchi water into the skillet with the pesto and stir to combine well until it thickens up slightly.

5. Using a slotted spoon, scoop out the gnocchi from the pot and gently place it in the skillet. Sprinkle the Parmesan all over and stir to combine all the ingredients, until everything is coated well. Add some salt and pepper if need be.

6. Serve hot with extra Parmesan cheese on top!

  6. You don't necessarily need a ricer to make gnocchi... I just use a cheese grater and it has worked every time. Seriously nothing beats homemade gnocchi (unless of course, you don't have the time to make them and then the store-bought will suffice!)

  15. oooo I'm craving this pasta now! Gnocchi is always so good but I never make it enough at home! Its kind of like a lost pasta, I always automatically go for the penne and spaghetti, delicious recipe!
