Cut-Out Christmas Sugar Cookies


My husband and I are addicted to How I Met Your Mother.  Yep, addicted.

We record every episode {new and old} and watch at least one episode a day.  And when say at least one, I really mean at least two or three.  Yes, I’m watching it right now.  



To tell you the truth, I’m pretty much watching it almost every time I’m working on a blog post.  If you could even call it working, I really just have the computer on my lap not really typing anything until a commercial or when the show is over.

I don’t know what it is about HIMYM {Yes, us fans can shorten the name and use abbreviations}.  It’s just so funny and captivating, we can’t stop watching it.


But I have pulled myself away from the TV to tell you about these Cut-Out Christmas Sugar Cookies.

Everyone needs a good sugar cookie recipe.  Especially one that can be used to cut out fun and festive shapes.  I found the perfect sugar cookie recipe from Sweet Sugar Belle.  She creates beautiful decorated sugar cookies.  I’m in awe with what she can create with sugar cookies and royal icing.



I knew that I wanted to make sugar cookies with festive Christmas cookie cutters.   So I whipped up a batch of sugar cookies {Yes I was able to whip up a batch because this recipe doesn’t need to chill! Major Bonus!} and cut them into shapes such as Christmas trees, candy canes, snowmen, bells, and stockings.



I simply decorated the cookies with dots of royal icing and a little shimmer of colorful sprinkles.  I wanted the sugar cookies to really shine, and not add to much extra sweetness with the royal icing.

These sugar cookies are soft with a slight crunchy and crumbly texture.  I added almond extract to the cookies so they have a nice almond flavor and aren’t bland or too sugary.

Cut-Out Christmas Sugar Cookies

Makes: About 30 3-inch Cookies

1 cup (2 sticks) Unsalted Butter, at Room Temperature
1 ½ cups Confectioners Sugar
1 Egg
1 teaspoon Almond Extract
2 ½ cups All Purpose Flour
2 teaspoon Baking Powder
1 teaspoon Salt

Preheat the oven to 400 degrees F.  Line baking sheets with parchment paper; You will need about 5 baking sheets so you will probably have to bake the cookies in batches.

In the bowl of a stand mixer, cream together the butter and the confectioners sugar.  Beat in the egg and the almond extract and mix to combine.  Add the flour, baking powder, and salt and beat until a thick dough has formed. 

Lie out a piece of parchment paper and place the dough on top of the parchment paper.  Place another piece of parchment paper on top and roll out the dough until it is ¼-inch thick.

Peel off the top piece of parchment paper and using cookie cutters, cut out the cookies and then carefully transfer them to the prepared baking sheets. 

Bake the cookies until they have and just before the edges start to turn a light brown, about 7 minutes.

Let the cookies cool on the baking sheet for a couple minutes and then transfer to a cooling rack to cool completely.

At this point you can either leave the cookies as is or decorate them with royal icing.  My favorite royal icing recipe is from Sweet Sugar Belle.  I recommend using her recipe as well.   I also decorated the cookies with different colors of sugar sprinkles.

Cookies last about up to 1 week in an airtight container.

  2. Andy and I watch multiple episodes of HIMYM too! It's our go to "nothing else is on" show! AND I adore those beautiful cookies. How perfect that they don't even require chilling.

  5. Oh this is a good sugar cookie recipe! in terms of taste/texture its probably my favorite.
