Mini White Chocolate Chip Cookies

 
I showed you a Chocolate Chip Cookie a few months ago.  It’s still one of my favorite cookie recipes that I use often.  I like it because it’s a good cookie base that I can add many different flavors to.  However, even though I have this recipe, I still try other cookie recipes.  


I don’t know what’s wrong with me.  I have a cookie recipe that I claim is the “one”, but yet I still search more.  I guess I just feel that there could be a better cookie out there.  And if there is a better cookie, I don’t want to miss out on it.  Am I the only one who does this?  I hope not.


So, here is another cookie recipe that I tried.  This recipe is different that other.  The other one was crispy on the outside and chewy in the center – Something that you normally find in a great cookie.  However, this one is soft all throughout.  It’s one of those cookies that really doesn’t rise and flatten that much.  This allows the cookies to be soft all throughout and not crispy on the edges.  


When I knew the cookies weren’t going to flatten that much, I thought it would be a good idea to make the cookies mini-sized.  Plus, they are just so cute when they are smaller.  And they are really easy to pop in your mouth :).  

I also made these with White Chocolate Chips because I was in the mood for something different than chocolate.


I really, really liked the texture of these cookies.  They had just the amount of softness, without being too fluffy.   And even though they weren’t crispy on the edges, they still had this great crunch when biting into them.

This isn’t the end of my cookie hunt.  I will continue to try new recipes, and will probably never stop.  If you’re on the same cookie hunt as I am, I think you’ll like this one.  Hopefully you'll try it out!

Mini White Chocolate Chip Cookies

Makes: About 50 Mini Cookies

2 cups All Purpose Flour
2 tsp. Cornstarch
1 tsp. Baking Soda
½ tsp. Salt
¾ cup (1 ½ sticks) Unsalted Butter, at Room Temperature
3/4 cup Brown Sugar
¼ cup Sugar
1 Egg
1 tbsp. Pure Vanilla Extract
1 ½ cups White Chocolate Chips

Preheat the oven to 350 degrees F.  Line baking sheets (I used 4) with silicone mats or parchment paper.  Set aside until needed.

In a medium bowl, whisk together the flour, cornstarch baking soda, and salt.  Set aside.

In the bowl of a stand mixer, beat together the butter, brown sugar, and sugar until light and creamy.  Mix in the eggs and vanilla.  Add the flour mixture and beat until the ingredients are fully incorporated. 

Remove the bowl from the mixer and, with a spatula, fold in the white chocolate chips. 

Using a cookie scoop, or a tablespoon, scoop small rounds of cookie dough onto the prepared baking sheets.  Bake the cookies until the edges start to turn light golden brown, about 8-10 minutes.

When the cookies are done baking, leave them on the baking sheet for 5 minutes.  Then transfer the cookies to a cooling rack to cool until warm or room temperature.

Serve and enjoy :)!

These cookies last about 1 week when kept in an airtight container.

  3. So funny... just before bed last night I was sitting with my mug of tea thinking that I should, for a change, make white chocolate chip cookies.   4. i like white chocolate chips way more than regular chocolate chips. and no one ever makes a recipe for white chip cookies (unless its macadamia nut white chip cookies) and i dont like nuts. thanks for finally posting a white chip cookie recipe
