White-White-White Cake


Happy 27th Anniversary to my wonderful parents!  (Yes, my parents got married on Cinco de Mayo!).

It seems like every post this week has started with “Happy ___!” And I’m sure many of you were expecting me to say “Happy Cinco de Mayo!” today.  BUT… today is my parents’ anniversary and that always rules over Cinco de Mayo :).  With this, I have dedicated this post and this cake to my parents!    


I love white.  It reflects a fresh, clean, and pure feeling.  I know some people think that white feels sterile and unhappy, but to me, it’s just the opposite.  White brings happiness.  


I have been wanting to make an all white cake for a long time. White cake – white chocolate filling – white fondant. Yum – Yum – Yum!  So when I was thinking of a cake to make for my parents anniversary, this was the perfect option!


This cake was probably one of the best that I made!  The simple vanilla cake is a classic that can’t go wrong.  And the white chocolate filling, was flavorful, creamy, and the perfect combination with the white cake.  Then topping is off with a fondant (and not the icky sugary stiff fondant, but a perfectly sweet marshmallow fondant) made the cake complete…. Completely amazing!


I have now added 3 go-to recipes to my collection, and I am very excited!  I have made a lot of white cake recipes – and I mean a lot.  But finally I found one that is perfect… yes, dare I say perfect :).  


One of the best things about this cake is not just the way it tasted but the way it looks.  It looks so fresh and sweet. I really can just look at this cake and be happy!

  1. DID I JUST READ THAT THIS CAKE WAS FILLING WITH WHITE CHOCOLATE MOUSSE?!?!?!?!? Make this for my graduation pleeeease! You know how serious I am when it comes to white chocolate goodness!

I miss you so much but you make me feel like you are right here with me and we are sitting together having a piece of that delicious cake. I am so proud to be your mom, I am so blessed. Hurry home and lets make that cake for Meli's graduation!

  4. Sometimes I just laugh when you do things like this. You never cease to amaze me!!! When I think about my life I know that I have many things I can be proud of, but the one thing I can boast about is that I am the father of 2 incredible, beautiful, talented, and most important, God fearing, young ladies. I love being your Dad!!!! Thanks so much for the gift of you.....can't wait to see you in a couple of weeks. Love you two!!!! Dad

  7. Cute blog. The picture of you is beautiful! I love your long hair! You must have a lot of patience, baking an 8-layer cake! I have been searching for the perfect white cake recipe too. I will have to try this one.
