We have so many bananas on hand… always! Steve goes to the Baseball field everyday and comes back with at about 3 bananas everyday. Good thing I eat at least 1 a day! Still… I am not a human banana-eating machine. So, I am constantly thinking that I have to do something with all these bananas lying around. And what do I always do when I have extra ingredients on hand…. Bake with them!
I didn’t exactly “bake” with them because I made a sorbet. So technically I froze them :). I combined the bananas with some fresh blueberries I had on hand (added some sugar and water) and then threw them in my ice cream maker. And that’s it! Only 4 ingredients and I created a refreshing and tasty dessert!
Another reason why I love ice cream, frozen yogurt, sorbet… it is soooo easy to make! Throw some ingredients in the food processor to make it smooth, then into the ice cream machine and your done! And this recipe is a great example of this.

Banana Blueberry Sorbet

Makes: 1 quart Sorbet
1 Cup Blueberries (Fresh or Frozen)*
1 Cup Sugar
1 Cup Cold Water
*Feel free to add more blueberries or bananas in this recipe. Add more blueberries to create a more berry-like ice cream. Make this recipe your own!
Combine all the ingredients in a food processor or a blender. Pulse until the mixture is smooth. Process the mixture in an ice cream machine according to the instructions. Serve immediately or place is a tightly sealed container.
Depending on your ice cream machine, you might need to put the mixture in the freezer for a couple hours to firm up.
This sorbet is best to be enjoyed within 3 days of making it. Enjoy J
