Blueberry Cake with Lemon Buttercream Frosting



Happy Good Friday!  Easter is this weekend and I’m sure many of you are preparing for a lovely dinner :).  If you haven't chosen a dessert to serve, here is one that would make your family and friends say, “WOW!”.






This cake was so much fun to make!  Creating a cake that is more involved and has multiple steps is exciting for me.  It’s such a great feeling to be in the kitchen for hours and, when everything is finished, see the beautiful product!


Inside this beautiful cake are gorgeous, fresh blueberries.  Blueberries are just coming into season, so they are developing their sweet and juicy flavor.  Blueberries are perfect on their own in this cake, but the subtle hint of lemon in the frosting really adds another great fresh flavor.


This cake has 5 layers – 2 layers are vanilla, 2 layers have whole blueberries in them, and the last layer has pureed blueberries.  Its filled and frosted with a creamy Swiss Meringue Buttercream (hinted with lemon).  Then to make it extra special, I finished it off with a beautiful ruffling technique.  This technique is easy to create (view recipe for directions) and adds a stunning presentation.


This dessert would be a perfect addition to your Easter table!

    We only have 1 piece of the cake, and unfortunately have to throw away the rest :/. With only 2 people in our household, we can never finish the desserts... If we did finish them we would be much bigger than we are now! We have been trying to think of something to do with extras... Any ideas will help :)
